D&D Cultures vs. Races

The majority of D&D races are physically similar, aka humanoid. I propose that predominately any differences are primarily cultural and have nothing to do with physiology – examples High Elf Weapon Training and Dwarven Combat Training.
I was happy to see Elf Traits are more in line with their physiology (old age, darkvision, fey ancestry), but I feel Dwarves missed the mark a bit because of the Dwarven Combat Training. I would have really liked to see each ‘Race’ set out as their Nature, followed by their specific Nurture.
